So It’s A Day Late… Whatever
I made my world famous Ham ‘n Bean soup yesterday, I was going to post the recipe a few days ago but I was busy…. ah, hell- I just forgot.
Anyway, here goes-
16 oz bag of Great Northern Beans
1 package of cubed ham
1 can chopped tomatoes
½ package of bacon
½ small onion
3 cups of water
Salt, Pepper, Cajun Seasoning (to taste)
Soak the beans overnight (or at least 8 hours). Whatever you do, don’t try the quick soak method- it never really works right. Drain before cooking.
Cut up bacon into squares.
Cut up the onion.
Add up all the ingredients.
Bring to rolling boil.
Continue to simmer about 3-4 hours, or until beans are soft.
Serve with cornbread, lots and lots of cornbread (I suggest johnnycake style).

You can buy ham already cubed? Is it in a can?
That sounds good, though. I'll have to make it if it EVER GETS COLD HERE. Ack. Arkansas sucks.

Yes, It can come in a can... after four hours of cooking all ham tastes the same anyway. I just get the cheapest they have.
The tomatos add a bit of "soupyness" to the fold. I like the peppers idea. I might add some next year.
